The regular kind of cinnamon sold everywhere is called “Cassia” cinnamon. The Ceylon type tastes 200 times better than the regular cassia cinnamon you’re likely used to.

Most Ceylon cinnamon comes from big commercial farms in Sri Lanka. Ours comes from our permaculture farm in Costa Rica.
Cinnamon farming requires the cutting down of the full tree and many plantations just grow cinnamon trees which is not great for the surrounding environment. They also use pesticides and artificial fertilizers.
The farm we import from has many permaculture practices in place and they grow many different foods and spices all throughout their property.
This is probably the biggest difference of all. Most cinnamon you’ll find in the stores have been sitting there or in warehouses for months or years.

You can reuse the bark to make more tea
* Place the broken cinnamon bark in a pan of water and boil for 5 -10 minutes.
* Shut off the heat and let simmer for 4 to 10 hours (overnight is better).
* Enjoy the tea cold or hot after meals.
Note: Break the bark into smaller pieces. The better extraction is achieved with smaller pieces, but not powder size.
